Ingredients: 1-2 Shallots; 8 Cornichons; 2 tbsp Pickling liquor; 1 1/2 tbsp Tahini; 1 tbsp Light soy sauce; 1/2 tbsp Dark soy sauce; 1 tsp Caster sugar; 1 clove Garlic; 10 g Ginger; 4 50g tin Anchovies; 1/2 25g pack Chives; 10 g Parmigiano reggiano; 2 275g pack Egg noodles; 1/4 Cucumber; Lee kum kee chiu chow chilli oil

This is my ‘picklish’ take on Dan Dan Noodles, a favourite of mine and quite possibly a death row meal. Funky shop bought pickles, anchovies and parmesan - this one might sound confusing but it just works!
